Chicken with Cardamom & Lemon


Recipe for: CHICKEN with CARDAMOM & LEMON

Ingredients:

·        4-8 chicken thighs/ drumsticks with skin on (on bone works best)
·        4tblsp clear honey
·        2 garlic cloves, peeled & crushed
·        2 lemons, zest of both, juice of one
·        6-8 cardamom pods, crushed so they split
·        1tsp coarsely ground black pepper
·        1tsp salt
·        1tblsp sesame seeds

Method:

1.      In a non-metallic bowl, combine all ingredients except sesame seeds
2.      Cover & chill for several hours, or overnight.  Turn/ stir occasionally if you can
3.      Pre-heat oven to 220C/ fan 200C/ gas 7
4.      Turn chicken pieces skin-side up in a baking dish just large enough to spread them out, and baste with the liquid
5.      Turn oven down slightly, then roast for 25 minutes
6.      Baste again, then sprinkle on sesame seeds
7.      Roast for another 10-15 minutes & check properly cooked through

What else you need to know:

1.      Serve hot with rice or veggies OR serve cold as part of a picnic/ salad
2.      You can use lime or orange instead of lemon
