Recipe for: HASTY PUDDING
Ingredients:
- Some jam or fresh stewed fruit (Rhubarb, plums
etc)
- 100g unsalted butter, very soft
- 100g caster sugar
- 2 eggs
- 100g self-raising flour
- 50g ground almonds
- 1 tblsp flaked almonds (optional)
- heat oven to 180C/ fan 160C/ gas 5
- spoon the fruit or jam into the bottom of a
pudding dish
- in a separate bowl mix the butter with the
sugar. Beat until smooth &
creamy
- beat in the eggs, then the flour, then the ground
almonds
- spoon the mixture over the fruit in the dish
- top with a few flaked almonds (if using)
- bake in the oven for 40-50 minutes, until the
sponge is cooked through
- remove from oven & allow to stand for a few
minutes
- serve with ice-cream, cream or custard
