Recipe for: BREAD – ONION FOCACCIA
Ingredients:

600g strong white
flour
·
1 tblsp
quick-action yeast
·
1 tsp salt
·
1 tblsp sugar
·
100ml olive oil
·
300ml warm water
·
Onion topping
o
4 tblsp olive oil
o
3 large onions,
sliced
o
1 tsp sugar
o
1 tblsp balsamic
vinegar
o
1 tsp thyme
leaves
Method:
1. In a large bowl mix flour, yeast, salt and sugar
2. In a jig mix the water and 100ml olive oil
3. Make a well in the flour and pour in the liquid,
stirring to make a soft dough
4. Turn onto lightly floured surface and knead for ten
minutes until elastic
5. Put into oiled bowl, cover and allow to rise for an
hour
6. Prepare the topping by slowly sweating the onions in
the 4 tblsp oil (about 25 minutes)
7. Add sugar and vinegar and cook for another 3 minutes.
8. Season, set aside and allow to cool
9. Oil a baking sheet
10. Knock back the dough and place it on oiled sheet
11. Stretch into a large oblong to fit the baking sheet
12. Cover and allow to rise for another 30 minutes
13. Heat oven to 220C
14. Make dimples in the dough with your fingertips
15. Top with the caramelised onions, thyme leaves & a
little sea salt
16. Bake for 25-30 minutes
17. Cool on wire rack
