Recipe for: CHEESE & CHIVE FLAPJACKS
Ingredients:
- 100g butter, melted
- 250g porridge oats
- 1 large carrot peeled & grated
- 4 tblsp mixed seeds (flax, chia, sunflower,
pumpkin, sesame etc)
- 100g mature cheddar cheese, grated
- 2 large eggs, beaten
- Bunch chives, chopped
- Heat oven to 180C (fan)
- Butter a small 20cm x 20cm baking tray
- In a large bowl mix the oats, carrot, cheese,
seeds, chives, salt & pepper
- Add the melted butter and beaten eggs & mix
thoroughly
- Tip the mixture into the baking tray, pressing
down & into the edges/ corners
- Smooth the top to make it even & sprinkle a
few more seeds
- Bake for about 30 mins until golden brown &
set
- Leave to cool completely before cutting into bars
& turning out
