Recipe for: CURRY – ULTIMATE BOMBAY POTATOES
Ingredients:

Big portion of potatoes
·
3 (2+1) tblsp oil
·
1 tsp mustard seeds
·
1 tsp cumin seeds
·
1 tsp fenugreek seeds
·
1 onion, peeled and finely sliced
·
2 heaped tsp ginger/ garlic paste
·
2 (1+1) green chillies, sliced
·
2 (1+1) tomatoes, chopped
·
1 tsp turmeric
·
1 tsp tandoori masala mix
·
110ml (10 + 100) boiling water
· ½ tsp salt
Method:
1.
Part-boil the potatoes in their skins, drain, peel and cut into chunks
– set aside (do not over-cook the potatoes or they will break over when cooked
later)
2.
Heat 2 tblsp oil in large pan
3.
Add the three seeds and fry until they start to pop
4.
Add onion and cook until soft
5.
Add ginger/ garlic paste, frying for another two minutes
6.
Add one chilli and one chopped tomato, frying for another two minutes
7.
Add 1 tblsp oil, turmeric and tandoori mix, stir for 5 minutes
8.
Add potato chunks, cover and cook for 5 minutes, turning regularly and
adding 10ml hot water
9.
Add the 100ml water and salt, cover and simmer for 5 minutes
10.
Add the other chilli and tomato
11.
Simmer for a final five minutes
