Recipe for: COLCANNON
Ingredients:
- 600g maincrop potatoes, washed & peeled
- 100g salted butter
- 1 large onion, or a bunch of spring onions, peeled & chopped
- 1 large head of kale or cabbage, cored, stalks removed, chopped & washed
- cut the potatoes into cubes & put them into cold water
- bring to the boil, then simmer for 10-15 minutes until tender
- drain well & leave in pan to steam a little
- mash & keep warm
- meanwhile, melt the butter in another pan & gently fry the onions until soft but not browned
- add the kale or cabbage & a splash of water
- cook until tender & the water has evaporated
- add the mashed potatoes to the mix & season
- add a small knob of butter & serve
- you can add scraps of bacon or ham if liked
- in the Hebrides, this is known as rumbledethumps
