Recipe for: SPICY CHICKPEA & TOMATO SOUP
Ingredients:
- 1 tblsp olive oil
- 1 large onion, chopped
- 1 garlic clove,crushed
- ½ tsp cayenne pepper (more if you like it)
- ½ tsp mixed spice
- 1 tsp coriander
- 410g tin chickpeas, drained & rinsed
- 850ml vegetable stock
- 500g passata
Method:
- gently fry the onion & garlic in the olive
oil, sweating them for five minutes without colouring
- add the spices & cook for another five
minutes
- rinse the chickpeas in clean water
- add the chickpeas, passata and stock. Bring to the boil, then simmer gently
for about 30 minutes
