Recipe for: SODA BREAD
Ingredients:
- 400g wholemeal flour
- 25 melted butter
- 1½ tblsp caster sugar
- 2 tsp bicarbonate of soda
- ½ tsp salt
- 225ml buttermilk
- 225 ml water
Method:
- preheat oven to 220C/ fan 200C
- grease a loaf tin & dust with flour
- put flour into a mixing bowl, then add butter
& rub between your fingertips until evenly dispersed
- add sugar, bicarb & salt, and toss this in
- in a large jug, mix the buttermilk & water
- stir this liquid through the dry ingredients
quickly & evenly, then scrape into the prepared loaf tin & smooth
it down
- place an oiled sheet of foil over the top of the
tin & squeeze tightly at the corners to keep it in place
- bake for 20 minutes, then remove the foil
- reduce heat to 200C/ fan 180C & bake for a
further 10-15 minutes until brown on top
- remove from oven, cool in the tin for 5 minutes,
then take out of the tin & cool on a wire rack
What else you need to
know:
- the secret to a moist tender crumb is a sloppy
& sticky dough, that is barely stirred together
