Recipe for: BUBBLE AND SQUEAK
Ingredients:
- 750g leftover, cold, maincrop potatoes, chopped
- 180g chopped/ sliced leftover greens (cabbage,
sprouts, peas etc)
- 1 onion, peeled & sliced
- 2 tblsps olive oil (or duck or goose fat if
available)
- Sea salt & black pepper
Method:
- heat the oil in a large frying pan over a medium
heat and fry onions until starting to brown
- combine the chopped potatoes & greens in a
bowl, then tip into the hot fat with the onions
- Stir it all together, add lots of seasoning, then
pat down into a flat cake
- fry for 5-10 minutes until beginning to catch on
the bottom
- stir & turn gently, to get the burnt bits n
the top & the uncooked bits onto the bottom of the pan
- drizzle in extra fat or oil if the mixture needs it
What else you need to know:
- great use of leftovers from a meal the previous
day
- great with cold cuts & chutneys for brunch
- equally good with sausages, crispy bacon & an
egg for breakfast
