Recipe for: NO-BAKE CHEWY CEREAL BARS
Ingredients:

75g mixed seeds
·
50g nut/ peanut
butter
·
50g clear honey
·
½ tsp cinnamon
·
1 tsp cocoa
powder
·
50g prunes,
chopped
·
50g dried figs,
chopped
·
25g puffed brown
rice
Method:
1. Line base of 20 x 20cm baking tin with baking
parchment
2. Put seeds in dry, non-stick pan & cook over medium
heat until they pop & turn golden
3. Transfer to bowl & allow to cool
4. In a large saucepan gently melt the nut butter &
honey fo2 mins
5. Take pan off heat, and stir in cinnamon, cocoa, fruits,
toasted seeds & puffed rice
6. Quickly transfer the mixture to the baking tin,
spreading & patting down to compact & even the surface.
7. Leave for 45-60 minutes to firm up
8. Slice into 8 bars with a sharp knife
What else you need to
know:
1. Wrap in baking parchment
2. Will keep 2-3 days in airtight container
3. Gluten-free!
