Chilli & Salty Sticky Pork Ribs


Recipe for: PORK – CHILLI/ SALTY STICKY RIBS

Ingredients:

·        For the ribs:
o   2 racks short ribs, cut into 3 or 4-rib chunks
o   1tsp black peppercorns
o   3 bay leaves
o   1 small onion, peeled & roughly chopped
o   1 small carrot, peeled & roughly chopped
·        For the sauce:
o   175g/ 6oz tomato ketchup
o   150g/ 5oz chipotle chilli ketchup (or hot chilli sauce)
o   100ml/ 4 fl oz dark soy sauce
o   175g/ 6oz dark muscovado sugar
o   4 tblsp teriyaki sauce (or 2 tblsp hoisin)
·        For the garnish:
o   Few grinds of sea-salt
o   2  chopped green chillies
o   2 chopped spring onions

Method:

1.      Place the ribs in a large pan with the vegetables and cover with boiling water
2.      Bring to the boil & simmer gently for 60-90 minutes until tender
3.      Meanwhile put all the sauce ingredients into a small saucepan & bring to a simmer
4.      Once the ribs are done, drain & discard the veggies
5.      Coat the cooked ribs in the sauce and either cover & put in fridge to marinate, or move straight to roasting
6.      Heat the oven to 190C (fan)
7.      Place the marinated ribs on a baking tray and coat with as much sauce as you can
8.      Grind sea-salt over each rib-piece
9.      Roast for 25-30 minutes, basting with more sauce every 10 minutes & turning frequently, salting them as you turn them over
10.   You want them starting to catch or char on the edges

What else you need to know:

1.      To serve – remove from the baking tray and carve into separate ribs
2.      Pile the ribs in a warm bowl, decorated with chopped chillies & spring onions
3.      Provide napkins & finger bowls – this gets messy!
4.      Serve with egg fried rice and some dipping sauce (sweet chilli or hoisin or soy)
5.      Also goes well with baked potatoes or baked sweet potatoes
