Pear & Ginger Pound Cake


Recipe for: CAKE – PEAR & GINGER POUND LOAF

Ingredients:

·        200g/ 7 oz unsalted butter + extra
·        100g/ 4 oz caster sugar
·        100g/ 4 oz soft brown sugar
·        2 large eggs, beaten
·        1 tsp vanilla extract
·        200g/ 7 oz self-raising flour
·        1 tsp baking powder
·        2 balls stem ginger in syrup, drained and chopped
·        2 pears, peeled, cored and roughly chopped
·        For the glaze
o   3 tblsp ginger syrup from the jar
o   3 tblsp granulated sugar

Method:

1.      Heat oven to 160C (fan)
2.      Butter and line 900g loaf tin with baking parchment
3.      In large bowl beat together the butter and sugars until pale
4.      Gradually stir in the beaten egg and vanilla extract
5.      Fold in the flour, baking powder and a pinch of salt
6.      Stir through the chopped ginger and pears
7.      Pour the mixture into the prepared loaf tin, smoothing the surface
8.      Bake for 60-70 minutes until risen, golden and a skewer comes out clean
9.      Remove from oven and allow to cool in the tin
10.   Remove to a wire rack and cool completely
11.   Whilst the cake is cooling make the glaze by mixing 1 tsp water with the ginger syrup and the sugar until dissolved
12.   Poke the surface of the cake all over with a skewer, then pour over the syrup
