Recipe for: POTATO with LEMON, HERBS, CUMIN
Ingredients:
- Several large potatoes, scrubbed & very
thinly sliced
- 2 onions, peeled & very thinly sliced in
rounds (optional)
- 200ml olive oil
- Sprigs of fresh thyme
- 2 tblsp cumin seeds
- 4 tblsp sliced/ shredded preserved lemon rind (or
use 2 unwaxed fresh lemons)
- Sea salt flakes & fresh-ground pepper
Method:
- Heat oven to 200C
- Choose baking dish that is right size for number
you are feeding, deep-sided if possible
- In a large bowl combine the oil, lemon, herbs and
seeds
- Pile in the potatoes (and onions if using) and
toss thoroughly to coat in oil
- Stack the thinly-sliced potatoes end-on (upright,
in rows) in the dish, alternating with sliced onion (if using) until the
dish is packed full
- Pour over any remaining oil and sprinkle with
sea-salt & pepper
- Roast in the oven for 75 minutes or until golden
& crisp
