Potatoes with Lemon, Herbs & Cumin

 Recipe for: POTATO with LEMON, HERBS, CUMIN 

Ingredients: 

  • Several large potatoes, scrubbed & very thinly sliced
  • 2 onions, peeled & very thinly sliced in rounds (optional)
  • 200ml olive oil
  • Sprigs of fresh thyme
  • 2 tblsp cumin seeds
  • 4 tblsp sliced/ shredded preserved lemon rind (or use 2 unwaxed fresh lemons)
  • Sea salt flakes & fresh-ground pepper 

Method: 

  1. Heat oven to 200C
  2. Choose baking dish that is right size for number you are feeding, deep-sided if possible
  3. In a large bowl combine the oil, lemon, herbs and seeds
  4. Pile in the potatoes (and onions if using) and toss thoroughly to coat in oil
  5. Stack the thinly-sliced potatoes end-on (upright, in rows) in the dish, alternating with sliced onion (if using) until the dish is packed full
  6. Pour over any remaining oil and sprinkle with sea-salt & pepper
  7. Roast in the oven for 75 minutes or until golden & crisp
