Spicy Chickpea & Tomato Soup

Recipe for: SPICY CHICKPEA & TOMATO SOUP

Ingredients:

  • 1 tblsp olive oil
  • 1 large onion, chopped
  • 1 garlic clove,crushed
  • ½ tsp cayenne pepper
  • ½ tsp mixed spice
  • 1 tsp coriander
  • 410g tin chickpeas, drained & rinsed
  • 850ml vegetable stock
  • 500g passata
 Method:


  1. gently fry the onion & garlic in the olive oil, sweating them for five minutes without colouring
  2. add the spices & cook for another five minutes
  3. add the chickpeas, passata and stock.  Bring to the boil, then simmer gently for about 30 minutes
