Colcannon Recipe

Just absolutely love this dish, especially made with home-grown potatoes, onions and kale or cabbage.  Goes great with bacon, liver or any robust flavours.

Recipe for: COLCANNON
 
Ingredients:

  • 600g maincrop potatoes, washed & peeled
  • 100g salted butter
  • 1 large onion, or a bunch of spring onions, peeled & chopped
  • 1 large head of kale or cabbage, cored, stalks removed, chopped & washed
Method:

  1. cut the potatoes into cubes & put them into cold water
  2. bring to the boil, then simmer for 10-15 minutes until tender
  3. drain well & leave in pan to steam a little
  4. mash & keep warm
  5. meanwhile, melt the butter in another pan & gently fry the onions until soft but not browned
  6. add the kale or cabbage & a splash of water
  7. cook until tender & the water has evaporated
  8. add the mashed potatoes to the mix & season
  9. add a small knob of butter & serve
What else you need to know:

  1. you can add scraps of bacon or ham if liked
  2. in the Hebrides, this is known as rumbledethumps
