Bubble & Squeak


Recipe for: BUBBLE AND SQUEAK

Ingredients:

  • 750g leftover, cold, maincrop potatoes, chopped
  • 180g chopped/ sliced leftover greens (cabbage, sprouts, peas etc)
  • 1 onion, peeled & sliced
  • 2 tblsps olive oil (or duck or goose fat if available)
  • Sea salt & black pepper
 Method:

  1. heat the oil in a large frying pan over a medium heat and fry onions until starting to brown
  2. combine the chopped potatoes & greens in a bowl, then tip into the hot fat with the onions
  3. Stir it all together, add lots of seasoning, then pat down into a flat cake
  4. fry for 5-10 minutes until beginning to catch on the bottom
  5. stir & turn gently, to get the burnt bits n the top & the uncooked bits onto the bottom of the pan
  6. drizzle in extra fat or oil if the mixture needs it
 What else you need to know:

  1. great use of leftovers from a meal the previous day
  2. great with cold cuts & chutneys for brunch
  3. equally good with sausages, crispy bacon & an egg for breakfast
